Ingredients
1 Lb of Chuck or Ground Round
1 Medium Onion Diced
1 Green Pepper Diced *
2 15oz Cans Kidney or Black Beans
2 15oz Cans Diced Tomatoes
3 cups of water
2 Tbsp Cooking Oil
3 Tbsp Ancho Chili Powder
1 Tbsp Cilantro
2 Tsp Paprika
2 Tsp Garlic Powder
1 Tsp Salt & 1 Pepper*
1 Tsp Oregano
Optional ½ cup Dry Lentil Beans Cook until soft then mash.
First add oil to bottom of pot then diced onions and cook until onions caramelize. Add diced green peppers cook until tender. Add diced tomatoes and water and stir. Mix all powder spices together in a small bowl and add them while stirring. Drain and rinse beans add and stir. Simmer for at least 2 hours with pot partially covered and stir every 15 minutes. In a frying pan brown ground meat and season with a little salt and pepper. Cook meat thoroughly and set aside. Add ground meat after the rest of the ingredients have simmered for at least 2 hours and stir. Simmer another half hour and taste. Add more salt, pepper or hot pepper to your liking. Optional if chili is being served right away add cooked lentil beans to thicken. After additional spices are added simmer another half hour. If chili is being served at a later time warm up chili add lentils and simmer for a half hour. If chili is too thick add more water.
- To Spice it up use canned diced tomatoes with green chilis. Also for hot chili use Ground Cayenne, Arbol, Habanera Pepper etc instead of black pepper.
