1/4 cup butter
1/2 cup all-purpose flour
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
3- to 3 1/2-lb cut-up chicken (Thighs and legs work best)
If using frozen chicken, make sure chicken is thoroughly thawed. Heat oven to 425°F. Melt butter and place in a baking dish. In a plastic zip bag mix flour, paprika, salt and pepper. Place chicken in zip bag with flour mixture and shake to completely coat the chicken. Place chicken, skin sides down, in buttered pan.
Bake uncovered 30 minutes. Turn chicken; bake 30 minutes more until juice of chicken is clear. When cooking chicken breasts depending on the size cooking time could be a little longer.
