Low Carb Redmill & Carbquik Pancakes

Ingredients

1 cup Low-Carb Baking Mix
1 cup Carbquik
2 cups Milk or Cream
2 Tbsp Canola Oil
3 Low-Carb Sweetener (packets)
2 Eggs
1 tsp Vanilla Extract
1 tsp Baking Powder

I tried using Red Mill Low Carb and Carbquik by themselves. For me Red Mill was to grainy and Carbquik to light and eggy. Putting them together makes a good mix. In a mixing bowl combine dry ingredients (Low Carb Baking Mixes, baking powder and sweetener). Make a well in the center of the dry ingredients and add the eggs, milk or cream, oil, and vanilla. Whisk until blended, approximately one minute. Pour batter onto heated, seasoned griddle. Cook until bubbles form on raw side. Flip and continue to cook until steam stops rising from pancake. I use 2% milk to reduce fat
