Hot Sauce Recipe Using Peppers
recipe #1 small batch
2 Cups of fresh Hot Peppers stemmed and cut
4 oz. of water
Equal amount of 5% vinegar to pulp
1 or 2 tsp. salt.
1 or 2 tsp of garlic powder.
1 tbsp Brown Sugar.
recipe #2 Large batch from mason jar
Cut off stems and cut peppers in half add to mason jar then fill with vinegar
Let peppers sit in jar with vinegar for at least a month.

1 cup vinegar from mason jar.
2 tsp. salt or to taste
2 tsp. garlic powder or to taste
2 tbsp. brown sugar or to taste
2 tbsp. smoked paprika or to taste (optional)
2 or 3 metal pots
Use old fashion food mill or food processor to puree peppers.
For fresh peppers add peppers and 4 oz of water to a pot.
Boil about 5 minutes until tender cool then puree.
For peppers from mason jar just puree.
Strain into a clean pot to remove seeds or skin.
Add spices taste add more spice ???
Bring to a slow boil and stir for about 5 minutes.
Pour into sterile hot sauce bottles.
