2 cups Krusteaz pancake mix
1 1/2 Teaspoon Cinnamon
1/2 Teaspoon nutmeg
1 1/2 Cups Apple Cider
Cinnamon sugar mix coating. (1/2 cup Sugar mixed with 1 tablespoon of Cinnamon).
In a saucepan, pour in the apple cider. Boil until it has semi-reduced, about 15-20 minutes. Remove from heat.
In a bowl, mix the pancake mix, cinnamon, and nutmeg. Add the egg and 1 cup of the cider.
In a large sauce pot or Dutch oven, pour in the vegetable oil. Heat until it reaches 350 Degrees.
Spoon batter into the oil. Fry 1 minute than flip and fry the other side until golden brown.
Only cook 2-3 at a time. If you cook too many at a time it will reduce the oil temperature.
Carefully remove from the oil and place into a bowl. Shake or roll in the cinnamon sugar mixture.
