Low Carb Stuffed Green Peppers With Riced Cauliflower Recipe

Ingredients
6 Green Peppers
1 Pound Ground Beef
1 Cup Cauliflower Riced
1 Medium onion diced
1 can diced tomatoes
1 6 oz. can tomato sauce
2 Tbl. Cooking Oil
1 Tsp. Garlic Powder
1 Tsp. Paprika
1 Tsp. Season Salt
¼ Tsp. Black Pepper

Instructions
First core and remove stems and seeds of green peppers. Place green peppers in a large pot of boiling water for 5 minutes remove and set aside.
If Cauliflower rice is frozen microwave, use instructions on bag of rice. If rice is not frozen microwave for 3 minutes then save 1 cup and remove any excess liquid.
Add oil to large skillet then sauté diced onions about 5 minutes.
Add ground beef cook about 10 minutes.
While beef is cooking mix all dry spices together.
Pour diced tomatoes into a bowl add dry spices and stir.
Add diced tomatoes with spices to ground beef cook for 5 minutes.
Finally add 1 cup of Cauliflower rice stir and simmer for about 25 minutes or until filling is thickened.
Set your oven to 350 stuff the green peppers with beef rice mixture and
add to greased baking dish or aluminum pan. Spoon tomato sauce on top of peppers.
Bake covered for 45 minutes then uncover and bake another 15 minutes.
>>> > This Cauliflower Rice Ground Meat mixture also makes a great Texas Hash. Add 1 or 2 Tsp. of chili powder to filling. Dice and add 1 or 2 green peppers. Grease a large baking dish add filling top with a cup of shredded cheddar cheese and bake at 350 for 1 hour.
>>> Not worried about carbs just use 1 cup of cooked rice!
